A small kitchen on the high desert with the lights on too late and the radio on too loud.

Born in a back-alley kitchen and tempered in the embers of midnight ovens, the Gallows Humor Baking Company is a traveling pop-up of small-batch cookies, dark wit, and louder-than-life flavor.

We started baking for the kind of nights that don't ask for dessert — supper clubs after the dishes are stacked, art openings as the wine runs low, the long drive home with the box on the passenger seat. The cookies turned out to be the easy part. The hard part was finding people who wanted them this dark, this rich, this much.

House Rules

Small batches, big swings

Every flavor is hand-rolled in counts you can hold in two hands. If a batch isn't worth the swing, it doesn't leave the kitchen.

Real ingredients, no apologies

Browned butter. Heavy cream. Single-origin chocolate. Local blue corn when we can get it. The pantry reads like a love letter; the labels read like a confession.

Dark wit, kind hands

The skull is the joke. The cookie is the kindness. We bake for funerals, weddings, late-shift line cooks, and anyone who needs a sugar-coated reason to keep going.

Made for the brave of palate

We chase contrast — salt against caramel, smoke against cream, blue corn against butter. If the bite makes you pause, we did the job.

The Ledger

  1. 2023

    A kitchen, a stand mixer, and one very mean chocolate chip recipe. Friends called it 'the gallows cookie' before we did.

  2. 2024

    First pop-up under string lights behind a record store. Sold out in 47 minutes. Stayed for the conversation.

  3. 2025

    Took the show on the road — supper clubs, after-dark bars, an art exhibit or two. Started rolling cookies by candlelight.

  4. 2026

    Santa Fe storefront in the works. Until then: the van, the marquee, and the Mourners' List.
